Gellan Gum

It is a water-soluble anionic polysaccharide produced by the bacterium Sphingomonas elodea (the current taxonomic classification). It was originally identified as “Pseudomonas elodea” based on the taxonomic classification at the time of discovery.

A natural and edible thickener, emulsifier, viscosity controling.
